Experimental
Traditional tequila production with brick ovens holding agave piñas, copper pot stills, and an open wooden fermentation vat
The craft

Slow agave. Open-air fermentation. Two distillations.

Paladar harvests seven-year Blue Weber agave from its own fields. The piñas are slow-cooked in brick ovens, then fermented in open-air pine boxes with wild and proprietary yeast. Every batch is twice distilled in a blend of copper and stainless steel pot stills, building clarity, structure, and agave depth.

Paladar's foundation was shaped by Eduardo Orendain Jr. and the traditions of El Llano Distillery (NOM 1109) in Tequila, Jalisco. That relationship still guides how Paladar approaches production, transparency, and traditional methods.
