What is aquavit

Centuries old. Newly essential.

Aquavit has been made in Scandinavia for hundreds of years.

It starts with a grain or potato base, infused and redistilled with herbs and spices, always including caraway. Over time, each country developed its own style. Svöl honors two of them.

Svöl makes this

Danish

Un-aged grain distillate. Caraway-dominant with notes of citrus. Traditionally served chilled as a shot.

Swedish

Un-aged grain distillate. Dill and fennel lead alongside caraway. Traditionally served chilled as a shot.

Norwegian

Aged potato distillate, which adds depth to the botanicals. An excellent sipping spirit.

The aquavits

Every botanical is selected and sourced from around the world by Gunnar Gíslason, owner of Dill Restaurant in Reykjavik, and Jonas Andersen, Beverage Manager for MeyersUSA. The distillation and extraction techniques were developed with Allen Katz at New York Distilling Co. in Brooklyn, where Svöl is made.
